I believe that it mainly has to do with the environment that they are raised in. The show dogs have to be groomed and brushed from the time they are pups to get their coats to "poof" like that. When they are house pets their coat breaks and does not grow like it does when it is brushed every single day. Their hair is generally shorter and smoother.
